Tonight we went a little funky on our dinner & used some fresh items we picked up at a local mexican grocery store to make one of the best meals we have made recently (mostly thanks to my hubsters cooking ideas!).
Mahi Mahi (2 pieces) --
1/8 cup of olive oil
3 tbs butter
Pineapple & papaya
Baked 15 minutes on 450 in a steam bag of foil, then seared in a pan.
"Cuban" Stir Fry --
Plantains, cactus, mushrooms, white onions, jalapeƱos, dried red pepper.
1/8 cup olive oil & 2 tbs butter
Fry in pan. Done! (Add a little kosher salt & cracked black pepper if needed)
